Unripe
jackfruit curry known as “Polos Curry” is a Sri Lankan cuisine which is very
famous as a local curry dish. The raw jackfruit is used for preparing this
delicious curry which is an iconic example for Sri Lankan spices.
Ingredients:
- 1 young jackfruit
- 2 cups of coconut milk
- Chopped onion (1 medium size)
- Sliced green chilies
- Crushed ginger (as required)
- Slightly crushed Cardamom
- 1 tablespoon of chili powder
- 2 tablespoons of roasted curry
powder
- 1 teaspoon of Black pepper
- 1 teaspoon of turmeric powder
- 2-3 pieces of garlic
- 2-3 pieces of gamboge
- 4-5 pieces of Cinnamon
- Coconut oil
- Curry leaves
- Pandan leaves
- Salt
Instructions:
1.
Remove
the hard edges of the young jackfruit.
2. Cut
the young jackfruit into small chunks. (Before cutting apply oil on both sides
of your knife to remove the sticky sap easily later).
3. Wash
and boil the small chunks of young jackfruit. (Make sure to add 2 – 3 pieces of
Camboge and salt as per the taste.
4. Take
a clay bowl and keep it on hearth (If the curry can prepare by using a firewood
hearth it will add tastier to the curry).
5. Add
2-3 tablespoons of oil to the clay bowl when it heats add chopped onion, sliced
green chilies, crushed ginger, chopped garlic, curry leaves and pandan leaves
as required.
6. When
the mixture turns golden brown add slightly crushed cardamom, 1 tablespoon of
chili powder, 2 tablespoons of roasted curry powder, 1 teaspoon of black pepper,
1 teaspoon of turmeric powder and 4-5 pieces of cinnamon.
7. Mix
all the ingredients well and then add small young jackfruit chunks and mix the
pieces with the mixture well.
8.
After
about 2-3 minutes, add 2 cups of coconut milk to the mixture.
9.
Add
salt as per the taste.
10. Let it simmer for about half an hour until the young jackfruit chunks are cooked and the gravy is thick.
11. Turn chunks couple of times to cook them well.
12. Serve the delicious Polos curry with
Rice, Bread or Roti.
