Coconut flatbread known as “Pol Roti” in Sri
Lanka is a famous food that has many different varieties. Basically, it makes with
white flour. Adding scraped coconut, chopped onions and peppers make Pol roti more
tasty food which can be served with Lunu miris (a kind of a chili paste) or
with any kind of curry dishes.
Ingredients:
- 500 g White flour
- Scrapped coconut
- Sliced green chilies
- Chopped red onions
- Curry leaves
- Salt
- Coconut oil
- 3 cups of Mild Heat water
Instructions:
- Put White flour into a bowl.
- Add scrapped coconut (as required), sliced green chilies, chopped
red onions, curry leaves, salt (as per the taste) and mix the altogether well
- Then add mild heat water as required while mixing the ingredients
together to make a dough. (You can use 1 tea spoon of coconut oil to make
the dough soften and easy to make).
- Then prepare small doughs from the big dough and flatten them to
form a flatbread (roti) using a board or flat surface.
- Then take a flat frying pan to cook the roti. (You have to cook the
both sides of the rotis)
- Serve the rotis with Lunu miris, Coconut Sambol, Seeni Sambol or any
variety of curry dishes.
- You can have ginger plain tea to make the taste of having hot rotis more.
