Ingredients

3 cups
of White or Red Kekulu Rice

4 cups
of thick coconut milk
·
Red chili
pieces
·
Maldive
fish pieces
·
Chopped
shallots
·
Water
·
Salt and
Lime juice as per taste
Instructions
1.
Wash
the rice and put into a clay pot and add water and salt.
2.
Boil
it in medium heat until the water is absorbed to rice and is soft.
3.
Then add
coconut milk and stir well.
4.
Simmer
on low heat until the coconut milk is absorbed to the rice.
5.
Take
off the mixture from the heat and put to a flatten pan/ plate and let it cool
6.
Then
cut into pieces as per your wish.
7.
For
Lunu miris (chili paste); put red chili pieces, chopped shallots, maldive fish chunks
together into a Mortar and grind using pestle or
grind the mixture using grinding stone.
8.
Move the mixture into a plastic or
glass bowl and add Lime juice and salt as per the taste.
9.
Now
your milk rice and lunu miris (chili paste) is ready to serve.
